Stacking Tiered Cakes

A tiered cake is a construction project wearing a party outfit. Cake itself has roughly the structural integrity of a firm sponge, which is to say none, and a second tier placed directly on top of a first will slowly sink into it over the course of an afternoon. Every stable tiered cake works on the same principle: no tier ever rests on the cake below it. Each tier sits on its own rigid board, and each board rests on supports driven down to the board beneath. Understand that and the rest is assembly detail.
Start with the boards. Every tier is built and finished on its own cake board cut to exactly the tier's diameter so the board disappears beneath the frosting. The bottom tier sits on a thicker base drum, at least twelve millimeters, ideally larger in diameter than the cake to provide carrying handles. Thin cardboard rounds are fine for upper tiers; the base takes all the load and must not flex. Finish each tier completely, including chilling, before any stacking begins, because decorating an assembled tower is miserable.
Supports come next. The classic options are plastic dowels, heavy-duty straws called boba or milkshake straws, and wooden dowels. Plastic dowels and thick straws are both excellent; straws are easier to cut and surprisingly strong. For each tier that carries weight, insert a dowel vertically near the center, mark it flush with the frosting surface, remove it, and cut all dowels for that tier to that exact length so the load spreads evenly. Four supports arranged in a square within the footprint of the tier above suffice for most home cakes, with a fifth in the center for larger tiers. Push them fully down to the board.
Stacking is a moment for cold cake and steady nerves. Chill every tier firm. Mark the center of the lower tier lightly, spread a small smear of buttercream or ganache on the dowel tops to act as glue, then lift the upper tier, supporting it underneath with a spatula and your flat hand or a lifting tool, and lower it into place starting from one edge. Small position errors can be nudged immediately; do not attempt adjustments once tiers settle. Check level with your eyes at counter height, or an actual spirit level if the cake matters.
For any cake that will travel, add a center dowel: a long, sharpened wooden dowel hammered gently through all tiers and boards from the top down into the base. Upper boards need a pre-punched hole or the dowel will crack them. This single spine prevents the failure mode that ruins transported cakes, which is not crushing but shearing, where tiers slide sideways off each other under braking and cornering. A tall cake with a center dowel can survive a remarkable amount of road abuse.
Afterward, hide the evidence and respect the limits. The seam where tiers meet is covered with a piped border, a ribbon, or a ring of decorations. Load-bearing rules still apply to fillings: soft fillings like whipped cream or curd under a heavy tier need a piped dam of stiff buttercream to prevent bulging. And remember the servant order of assembly: stack as late as is practical, keep the assembled cake cold, and when in doubt, transport tiers separately and stack on site. Structural failures are almost always preparation failures, and every one of them is preventable with boards, dowels, and chill time.
