Bench scraper

A flat tool held against a spinning cake on a turntable to smooth frosting into sharp, even sides.

A bench scraper is a flat, rigid tool, usually a metal or plastic blade, held vertically against the side of a cake on a spinning turntable to push excess frosting off and leave the surface smooth. It is one of the main tools that separates a rough, hand-smoothed cake from one with sharp, professional-looking edges.

The scraper works by staying still while the cake turntable does the moving, so the blade shaves frosting down to one even thickness in a single continuous pass instead of the streaky look that comes from smoothing with a spatula alone. A straight-edged scraper produces flat sides, while a slightly curved one can help blend a cake's shoulder into its top.

Look for a scraper with a comfortable handle and an edge straight enough to sit flush against the cake without gaps. Stainless steel holds a flatter edge over time than flexible plastic. A common mistake is angling the scraper instead of holding it perfectly upright, which carves a taper into the sides rather than leaving them straight.
